I have installed a pellet/chip boiler which is running at the moment on pellets, which are bought from Verdo. I fit Vaillant boilers mainly, so prefer them. The main difficulty with combis is that if people can't manage their water usage so that they're not trying to have a shower and run the bath at the same time they're going to struggle to be happy with the water flow. I would have thought a Vaillant 831 would be adequate for your situation with sensible water management. The only advantage you'd get from the bigger boilers is improved water flow rate, but that is going to rely on you having a big enough water supply in the first place to provide enough volume. If you house has a standard half inch (15mm) main coming into it, you won't see any advantage from the bigger boiler. If you have a bigger mains supply then it might be worth it. I'd like to put a looped DHW circuit in to allow you to use multiple taps simultaneously though or you'd probably not see the full advantage.
