I would have thought a Vaillant 831 would be adequate for your situation with sensible water management. The only advantage you'd get from the bigger boilers is improved water flow rate, but that is going to rely on you having a big enough water supply in the first place to provide enough volume. If you house has a standard half inch (15mm) main coming into it, you won't see any advantage from the bigger boiler. If you have a bigger mains supply then it might be worth it.
